I know I know, the calendar says Fall is technically here, the leaves are turning, it’s slightly breezy at night, and you were anxious for another recipe a bit more Fall-ish right? Sorry friends, but it is back in the 90’s again this week here in Northern Cali, and I just scored an entire box of gorgeous peaches on sale at Trader Joe’s (love that place)! I’m ready for all the goodness the Autumn harvest brings too, but for now, I am trying to soak up these last few weeks of the Summer bounty. So I present you with: Burrata cheese on English muffin toast, with crushed almonds, basil, honey, and fresh peaches-my new morning obsession. If you hurry, you just might be able to get some of your own!
Let’s talk Burrata Cheese. Generally speaking, it is a fresh mozzarella cheese ball with a mozzarella cream inside. Sure, yeah, that sounds pretty delish, but follow me a little deeper here. Italian translation of Burrata=buttered. Mm hmmm buttered. The outside is like this pillowy soft, delicate cheese purse that protects a glorious hidden treasure. Once the purse is cut open, a cache’ of fresh, creamy, buttery goodness comes out to play. I could eat this mystical creation of a cheese everyday. No really dare me to. I’ll put it on pizza, salads, meat, fruit, vegetables, pastas, sandwiches, soups, desserts, on a plate, a even in a box with a fox…haha you get where I’m going. Burrata can be found at Trader Joe’s, Nugget Market, Whole Foods, or your local cheese shop will likely carry it. It is meant to be eaten fresh, so enjoy it within a few days- not gonna be a problem after the first bite!
To make this Peach and Burrata Toast: Simply toast up some English muffins, top with sliced peaches, halved Burrata, a drizzle of honey, a couple basil leaves, a handfull of crushed almonds and a pinch of salt and you are in business. The simple preparation here really lets the fresh peaches and creamy Burrata shine together!
*Tip for eating: Enjoy peaches on one side of the muffin and Burrata on the other; take in each, bite for marvelous bite.
- 1 ripe peach
- 2 english muffin
- 1 ball of fresh Burrata Cheese split in half
- 2 basil leaves sliced or whole
- 2 tablespoons chopped almonds
- 3 tablespoon honey
- 1 pinch of salt
- Toast muffins.
- Top with everything else.
- Now go enjoy your day, it's going to be great after you consume this I promise.
Guess I’ll be eating standing up this morning..don’t want to wake the small furry beast!
