I love this salad! It’s filled with all kinds of tasty, healthy, goodness and it is so easy to make! It’s my go-to when I want a quick, easy salad that will also fill me up. Normally salads are a side dish in my world, but this one takes the plate! (Or rather, bowl in this case.)
First up, gathering all those colorful ingredients.
Then, it is a chopped salad – so start chopping. Bite size pieces are perfect.
Pour into a bowl with a cup or two of your favorite greens. For an extra protein boost, add some shredded chicken. (Or, if you’re feeling a little fiesta coming on, omit the greens and just dip some chips into the mix!)

A fresh, easy and filling salad.
Ingredients
- ¼ of a Red Onion
- 1-2 Avocados
- 3 Ears of Corn or (1 and a half ½ Cup of canned)
- 1 Cup Black Beans
- 1 and a ½ Cups Cherry Tomatos
- 5 Green Onions
- 4 Cups of Greens
Instructions
- Chop all salad ingredients to bite size pieces
- Put in a large bowl
- Mix
- Enjoy!
